«Food is experience»
Passionate about travelling and about discovering and savouring the food of different cultures, Portuguese chef Nuno Mendes has this week opened Lisboeta, a new restaurant that takes diners back to his hometown.
His cuisine is mainly influenced by his travels to Japan and his career close to the godfathers of experimental cuisine such as Jean-Georges Vongerichten and Ferran Adriá. The result are bold dishes that put the product in value and that are tasted with all the senses.
Focused on the experience around the table and the need to taste, he started The Loft. The chef organised secret dinners at his home, where he would cook for others, allowing him to experiment beyond a closed menu.
These gatherings became popular and their success led to the creation of The Loft Project, more formal gatherings that hosted different chefs from different parts of the world for two or three days.
We share the importance of the experience, the power of food to generate special situations at the table. The way in which travel and living experiences nourish and inspire us.
«La comida es experiencia»
Apasionado por los viajes y por descubrir y saborear la comida de distintas culturas, el chef portugués Nuno Mendes ha inaugurado esta semana Lisboeta, un nuevo restaurante que traslada al comensal hasta su ciudad natal.
Su cocina está compuesta principalmente por la influencia de sus viajes a Japón y su trayectoria cercana a los padrinos de la cocina experimental como Jean-Georges Vongerichten y Ferran Adriá. El resultado son unos platos atrevidos que ponen en valor el producto y se degustan con todos los sentidos.
Enfocado en la experiencia alrededor de la mesa y la necesidad de probar, comenzó The Loft. El chef organizaba cenas secretas en su casa, donde cocinaba para el resto, pudiendo experimentar más allá de un menú cerrado.
Estos encuentros se pusieron de moda y su éxito derivó en la creación de The Loft Project, encuentros más formales que acogían a distintos cocineros de diferentes partes del mundo durante dos o tres días.
