Honest, sincere and excellent cooking
Chef David Gingell and his partner Jeremie Cometto-Lingenheim seek to showcase food from activities they consider relevant and valuable by bringing them to the tables of their London restaurants.
Jolene is a project that aims to promote the sustainable cultivation and farming of cereal, a product with a little publicised environmental impact. Everything from bread to pasta is made from grain that comes from sustainable, efficient and sensitive farming methods.
They consider their restaurants and their food as a means to spread, in a fun and delicious way, their concern about the negative effects caused by large-scale agriculture, and to support regenerative agriculture.
We share with them honesty and simplicity in the way of doing things. Perseverance in our work. The search for excellence in the origin and quality of the products.
Driven by their goal of improving the grain economy and creating a sustainable food system, David and Jeremie have taken this project further and in September 2020 they launched Big Jo, a ‘big sister’ of Jolene’s, in Finsbury Park.
Cocina honesta, sincera y excelente
El chef David Gingell y su socio Jeremie Cometto-Lingenheim buscan poner en valor los alimentos procedentes de aquellas actividades que consideran relevantes y valiosas, llevándolos a las mesas de sus restaurantes londinenses.
Jolene es un proyecto que busca promover el cultivo y la ganadería sostenible del cereal, un producto con un impacto medioambiental poco divulgado. Desde el pan hasta la pasta está elaborado con grano que proviene de métodos de cultivo sostenibles, eficientes y sensibles.
Consideran sus restaurantes y su comida un medio para difundir, de forma divertida y deliciosa, su preocupación por los efectos negativos provocados por la agricultura a gran escala, y para apoyar la agricultura regenerativa.
Compartimos con ellos la honestidad y la sencillez en la forma de hacer las cosas. La perseverancia en el trabajo. La búsqueda de la excelencia en el origen y la calidad de los productos.
Movidos por su objetivo de mejorar la economía del cereal y de crear un sistema alimentario sostenible, David y Jeremie han llevado este proyecto más allá y en septiembre de 2020 inauguraron Big Jo, una «hermana mayor» de Jolene, en Finsbury Park.
